Sinfully Good Low Carb Keto CHOCOLATE CHIP Cookies Simple Recipe

INGREDIENTS

  • 1 Stick of salted butter

  • 3/4 Cup of Monk fruit or swerve granular sweetener

  • 1 Teaspoon of vanilla extract

  • 1 Large egg

  • 1 1/2 Cups of almond flour

  • 1/2 teaspoon baking powder

  • 1/2 tsp xanthan gum

  • 1/4 tsp Salt

  • 1/3 cup Cup of Lily's chocolate chips

INSTRUCTIONS

  • Preheat the oven to 355 degrees. Microwave the butter for 30 seconds to make soft. Make sure it's not HOT.

  • Place the butter and sweetener in a mixing bowl and beat until combined. Add the vanilla and egg, and beat on low for another 14 seconds. (Yes really, 14 seconds) Add the almond flour, baking powder, xanthan gum and salt. Beat until combined.

  • Shape the dough into 12 balls and place on parchment paper on a baking tray. Bake for 10 minutes

  • Cool before serving. To keep cookies a little soft, place piece of bread on top of cookies in an airtight container for up to 6 days.

Hey! Im Erica Kuiper! 

I initially started a low carb lifestyle back in 2010. I was diagnosed with an autoimmune disorder in which your immune system creates antibodies that damage your thyroid gland) and I was weighing in at over 300 pounds. I was miserable. My entire body was inflamed and I was in chronic pain.

 I tried every fad diet out there: The cabbage soup diet, replacement shake diets, Apple cider vinegar diet, Low fat diet, Elimination diet, The blood type diet, ideal protein diet and the juicing diet. Nothing really worked for me. They were all temporary fixes. The keto (low carb) lifestyle is the only thing that gave me the results I was longing for... permanently! Since beginning my journey I've lost 100 LBS - AND kept it off!

My specialty is creating recipes that are fun, yummy and exciting. Since this is a lifestyle, and not a fad diet, we want to make sure that the foods we eat are simple and delicious. If we are enjoying ourselves and having fun, we will stay on course. I’m also passionate about sharing how to prepare and plan ahead of time with your meals and snacks for optimal success!!!!
